Porsche Crest Unplugging the O2 sensor

By unplugging the O2 sensor on a 3.2 carrera, will it give me any performance increase?

No.

in fact it will likely cause the car to run worse. On the Carreras, the O2 sensor is used to determine the overall mixture.
