Oil pressure gauge
I would like to change out the oil prssure indicator on my 71 engine from the simple green indicator to the one that shows actual pressure readings. Do I have to change out the existing oil pressure idicator/sensor on the engine itself or simply change out the dashboard gauge? Thanks.

Just the gauge. Easy stuff, just make sure you disconnect the battery to avoid a short when pulling the connectors from behind the gauge.

You'll need the gauge and a matched sender. Don't go all macho on the removal. Stuff can break and it ain't cheap.

oil pressure gauge
It seems my 72 with a 71 engine has two oil pressure sensors - one in the right front top of the engine next to the oil thermostat which is currently connected and one in the right rear of the engine near the right side chain tensioner housing which is not connected. Which one should I replace? Thanks

I think the one next the thermostat is for the pressure warning light. the gauge uses the the other one.

You can also get just an overlay from these guys (no affiliation)
911 Gauge module overlays It's a fair bit cheaper.

The top picture is for the "low pressure" warning light.
The bottom picture is the oil pressure gauge sending unit. That's the gauge marked "Druck". If you use the correct porsche gauge, all you have to do is wire the gauge and you will have a live oil pressure gauge. If the sender still works. Ken
