CHT Sensor Test - This Should Work, Right?

I've got my engine out (87 Drop Top - Drop-n-Top End) and the insulation on the pulse sensor wires is crumbling, so those will be replaced, but the CHT looks like it may be new. It's the two-wire type, the wires are flexible, the clear sheath covering the two wires looks good and the rubber grommets are supple. I'd like to test before I reinstall the engine, here's a post that says how to perform the test:

The question is how to test while at operating temp if the engine is out of the car. I'm thinking I'll dip the CHT sensor in a pot of water on the stove and see if the ohms drop as specified as the water heats. Any thoughts on whether this will give me a good CHT sensor health status?

The car was running OK before the drop (excepting the oil-burner-syndrome.)

I would think your temp testing would work. (although I've never conducted such a test).
