Curious on the proper way to check the oil level.. Drained oil from both drains, put new seals on plugs chaanged the oil filter. Added 8 qts took the car out for a half hour drive. than tried to check level with car at idol, when I remove the oil cap the car sputter than dies......any suggestions

But to be safe, add only 9.5 then fill as need after she is nice, hot and engine on. If it dies when cap is open, indicates more than not that you have a vacuum leak. Oh yeah, Welcome Aboard, she a Beaut :-)

Try the vacumm restrictor as mentioned in the pasted thread by gregwils.
If that's the issue, then start hunting vac leaks. But that can be a slippery slope and a PITA

In the meantime, you can pinch the breather hose to stop the HUGE vacuum leak and check the oil. I would use a set of vice grips and a rag to pinch it off.

Oil weight
Just would like to confirm you're using the correct weight oil. I know a guy who ran 5W20 until I asked him

Update, Porsche recommends 10w-60 for SC onwards. 20w-50 for earlier cars.
