85 Backdate project electrical advice

I'm backdating an 85 and in the process of doing so I plan to keep some of the electrical components just because. The car has a darn near flawless body, but it sat in a garage with mice making the interior and dash area home for many years. I'm stripping it down and starting fresh. I plan to keep the 3.2 and DME as well.

Should I be concerned with the integrity of wiring for an 85, IF the wiring once removed and check over well for the mice issue looks acceptable?

Is there anyone that the complete harness can be sent to for selective removal of circuitry?

Is there anyone that offers complete rewiring kits for a car of that era?
