I'd like to replace the stock brakes on my '74 project car with something beefier, but I'm not interested in machining or other extensive mods. What's a good bolt-on upgrade?

That's a sweet setup Bill, but I'm thinking more budget. As in new $70 rotors and used Carrera calipers perhaps.

I was going to recommend the Carrera ('84-on) setup as a low cost option but then I noticed you're planning to use 3.6 l power so I didn't initially respond. Unless you're more concerned with going and not as worried about stopping, I'd suggest rethinking your brake setup as the Carrera calipers, while perfectly adequate, are not so with a 3.6's speed potential. 930 brakes are the next bolt-on setup, but not inexpensive. Boxster brake calipers, while bigger and a bolt-on, are not so effective relative to their cost.
Still, if you insist, the maximum bolt-on equipment you can hang on Carrera brakes will be slotted rotors, agressive brake pads, fresh air brake ducts, HD brake fluid, Ti brake shields and an MPC water mist setup (the last two are commercial plugs, btw). I have to agree with Sherwood's analysis 100%. My SC brakes even with aggressive pads and ducting were marginal at best for track work. The 3.6 won't help any.

I most likely won't track this thing, and even if I do, it will be rarely. So, most use will just be around town at less than 50 mph.

Others who have personally done this upgrade (Randy?) may want to correct me, but I believe the Boxster (monoblock) calipers bolt on using an adapter onto 3.5" bolt spacing A or S front struts along with 24mm Carrera rotors. The brake lines may also need some adaptation to fit. I think the rears are a bolt-on affair as well.
