We put webers on my 3 liter and it's amazingly flexible. Great low end and its rev happy. Best of both worlds.

No issues.

if a true 3.ol Carrera being such a rare bird I would seriously consider saving the CIS & wiring harness so if you ever needed to go back it's all intact. get timmy2 to build you a more carb thinned harness and mothball all of the takes offs... speaking of ignition, I'm not sure about the Carrera 3.o, but the two early, big port motors ive gone to carbs on the OE CDI & coil were upgraded for carb voltage.
