Need to re-tune my Zeniths (after a valve job)

Hi all, I've just completed a valve adjustment and I've found some valves out of spec (both intake valves and exahusts).
Now is all in spec 0.1mm clearance and double checked with backside method and with the Kirk tool (very very good tool).
Engine now seems to run better, just a little bit noisy, but I assume this is normal.

Engine runs ok and above 3k rpms it really pulls great... the problem seems to be below 3k rpm specially from 1100 to 3200 bacasse engine seems running rough, and on light accelerations it has some initial hesitations.

Now do I have to re-tune my Zeniths ? (before of the valve lash job I do not had this problem).

How to proceed, better to re-carburate from scratch (air bypass closed, air mixture 2,5 turns out then idle balancing, air balancing and lean best finding) or is there a better, and possibly faster, way?
