Matching the Combustion Chamber Volumes...
Is this (as Martha Stewart would say) "a good thing"? Should I have this done when I have my 2.0 heads rebuilt to otherwise stock specs?

Matching the chamber volumes (and the total compression ratios) over the cylinders is a Good Thing. Uneven compression means uneven forces which means uneven (and accelerated) wear.
