Valve seals on 87 S (replace??)

Is it possible to replace the valve guides / seals with the head on the car?? I know it is possible on some cars and have no idea if it is possible on mine.

I have smoke right at startup that goes away fairly quick so I am assuming that oil is leaking into the cylinder from the head.

Yes it is possible without removing the head. However, you will need some method of keeping the valves "up" after you remove teh keepers and springs. (compressed air works well)

You must remove the camshafts to get at the valves - do a search on timing cams before tackling this job

AFJuvat is correct. If you use the hose from a compression tester and remove the gague and install a compressed air fitting. You can feed air into the spark plug hole to hold up the valves. Do one cylinder at a time and raise each cylinder to the top of their bore just in case. You just need to come up with a method on compressing the springs to release and reinstall the retainers.

Yes it is possible but you need special tool to compress the springs which is probably impossible to get. Porsche workshop manual has got two tools that may do the job, but I don't think the simple cheep looking one is up for it. Also care must be taken not to score the cylinder where the lifters are sliding in and out.

If you can find a tool and you trust yourself not to make any damage I would try to do the job without taking the head off. But usually if the seals has started leaking then other parts of the head are likely to need attention. So taking the head out and do a general head overhaul will be your best choice. You will need to find a machine shop to do the overhaul for you.
