How do you tell if CV is bad?

I started to get a clunking noise in the rear under acceleration and deceleration so I took the axles out, disassembled them and cleaned them up real good but I dont really see any wear anywhere on the cv, the boots are not cracked and they seemed to have plenty of grease. I've only done the one side so far and will do the other tomorrow. I checked everything for cracks and excessive wear, is there something else i should be looking for or is any wear at all bad? I also should mention that when you hold the throttle steady it doesnt make any noise. Any help would be greatly appreciated. Thanks in advance.

Sounds just like mine when my CV went bad. Mine sounded worse on curves also. I didn't have the patience to really inspect them like you have - just replaced the whole axles. Left side usually goes first (exhaust heat). I hear some people here have had good luck turning the axles around (inner --> outer).

i repacked mine after inspection...problem solved...could just need a regreasing

I checked the drivers side CV's this weekend completely disassembling them and cleaning them and both of the CV's did show quite a bit of wear so I ordered 2 new joints and will just repack the passenger side, is there a particular brand or type of grease anyone could recommend?

Yes there is, don't use just any grease. You have to use the gray crap that doesn't come out when you get it on something you don't want it on. Seriously, Pelican has it in the tube (for 4 jounts) or in a pouch with the joint rebuild kits.
