Oil level cold too high

Had my oil changed at a local high end car shop. Not Porsche specific but lots of nice older cars. Been noticing lots of white smoke on startup and today I thought to check my oil level and found it quite higher than the upper mark.
Should I try and siphon some out with a fluid extractor?
Or just drain it and put new oil in?

Looks like aprox 1 quart overfilled . I would drain or suck out a 1/2 quart and drive it and check again . Checking the oil after sitting overnight gives the most accurate reading.

Did the car smoke before the oil change ? Were you running synthetic or conventional oil before ? And what did they put in ?

Didn’t smoke before.
Sometimes after sitting for a long time it would smoke a bit on startup.
Conventional oil before change and after change.

Generally, up to a half-quart over is not regarded as a problem. A full quart over might be.

If you've got an easy way to do it, just siphon out a half-quart or so and see how it goes. Make sure to take a sniff of the oil, though. If it smells strongly of fuel, the oil is diluted and you should not drive the car any more until you change the oil and figure out how the fuel is getting in there. (It's often caused by a very very rich mixture.)

Looking up the invoice, I actually had it in for a new clutch cable.
They added 4 quarts of 20w50 dino oil and a Wix 51085 filter.
Here is the best part. I thought this was recently, it was actually 12/9/24! And if my odometer is correct I have driven it 170 miles in that time. My car has dual carbs that were rebuilt when I purchased it.

So I checked my owners manual and it says 3.7 quarts or 3.2 quarts
My engine was a 1.8
When I had it rebuilt we made it a 2056cc
How much oil should I add when changing my oil?

Does the manual say 3.2 without filter change and 3.7 with filter change ? When the engine was rebuilt was anything added like an extended sump or oil cooler ?

Change the oil/filter and add 3.5 quarts . Run it then let it sit overnight . Check the level next day and add as needed .

Does the oil smell like gasoline? If so, you've probably got a carb problem that is dumping raw fuel into one or more cylinders. Find and fix that problem before driving the car. (And change the oil regardless.)

Changed oil. Changed filter. Added exactly 3.5 quarts. Took a short drive. Parked it.
Checked oil this morning and it’s over the second line.

Took a picture but the oil is so clear it doesn’t show on the picture.
