Wife just got a new 8.5 qt dutch oven for making fire/coal peach cobbler. We tend to make most of our meals over the open fire, even though we have a highly appointed 2011 Heartland 32' RV with all the amenities.
I cook a mean fire simmered chili, and char broil steaks, or seasoned chicken thighs, and when bored do the pie iron pizzas/pies/sandwiches.
Something we tried last year that we will do again this year is a foil pack cajun shimp boil with sausage, potatoes, onions, and any other items you want included.
We will be camping over a 3 day Mother's day weekend coming up, a week in June, a week in July, and probably several times in Sep/Oct this year.
