Pie Irons.
Bring several in various sizes.
You can make pretty much anything in good seasoned cast iron pie iron and it's got a lot of hidden benefits.

Cleaning is easy, rinse it and dry.
The food you make in a pie iron is generally eaten by hand, so no additional dishes or utensils.
Each half can double as a single serving cast iron pan.

Roast a pork butt before you leave. Allow the rendered fat to congeal and spoon into a small Mason-type jar. Use the rendered pork fat to grease your pie irons. Best sandwiches ever.
