Chicken fat sounds scary to most people but it's in a lot of legit Chinese food and any real bowl of ramen will have some, too.
I made some Yangzhuo fried rice yesterday, it was pretty tasty.
You should find some Chinese sausage, or run down to SF and buy a couple pounds of char siu to stockpile in the freezer, so you won't have to resort to using Spam next time. Gotta be a project down there somewhere you need to visit...

chinese sausage is a staple at my place. i even have the liver version in my fridge right now. and i like Spam. the spam yesteday was leftover from some Musubi i made.
