Cliff - I eat about 90% plant based but I do enjoy a burger now and again. No formal food education but I've always enjoyed cooking. Making a plant based recipe that fits in our strict nutritional guidelines is and is commercially viable can be a real challenge but when it hits and gets good reviews, it's very rewarding.
My background is commercial real estate and construction, so I'm spending most of my time planning future stores and exploring franchising the concept. My girl and her sis are running the day to day. Fun stuff.
