That's why they need to be soaked, rinsed, soaked, rinsed, etc... before use, but by the time you get them out of a bag, it's probably kind of too late for that. Besides being hard to digest, I think the phytates also block our ability to get all of the nutrients out of the stuff that we're eating.
I wonder if oat bran also has phytates.
