The flight sim we use most is from Third Wire. They will run on just about any PC these days, but a discreet graphics card will make them look much nicer. The DCS series is also a good sim but has much higher hardware requirements. If you just want to get into it without a huge cost upfront the Third Wire series is inexpensive and there is a ton of DLC for it. Most free. If you are interested in the DLC stuff, send me a note or PM.
My nephew has this setup and it seems pretty decent and is programmable.

I use CH products because I like the programability better and more buttons but it is twice the cost.
I only use a single monitor with TrackIR. I cannot tell you how much it helps.
