I agree. Sometimes it is hard to know when to stop. But to each his own.
In my case, you can see all the details in my garage, I drew the line at keeping heat, the wipers, no full cage, and not too stiff on the suspension.
My car weighs 2100 lbs, with my CF doors. During the warm months I drive with my CF race doors that have NO windows. Around town not a problem for me. If I decide to take it on a trip, I can change to my steel doors that have glass windows, in about half an hour.
I removed all the sound deadener, except the engine compartment pad. I have thin black carpet in the rear, no carpet in the front foot area. It is only slightly louder than when stock. I drove it three hours to the track and it really wasn't overly loud or tiring.
I have race seats, old MOMOs, installed. Again, I find them just as comfortable as the stock seats. On a trip I will add some extra padding.
My suspension is admittedly boarder line. It sits really low, at around 23.5"r and 24"f. Some of the rough roads around here I avoid.
I have a rear 6 point cage and race harnesses. I engineered the roll bar to NOT be anywhere near my head. I would like to add a full cage, but I can't justify that on a street driven car, just too dangerous IMO.
My tires are RA-1s. Not a tire that I would recommend for a street only driven car, but I find that they have worked great for me both on the street and track.
The best bang for the buck on weight reduction is FG hood, doors, seats and bumpers. Replacing the rear windows with Lexan saves some weight in the right place as well.
My 911 is still quite civilized especially compared to the Austin Healey that I drove in college. It is a sports car after all.
Keep up the good work.
