It's good to see old 356s in rough shape being restored, whether it be to perfectly stock original perfectionist status, or outlaw. I always prefer the hotrod approach, and to see some different ideas about what "cool" is.
Foose always seems to have the same recipe for the cars he gets ahold of, but does a good job within a short time frame rebuilding cars that would have been forgotten/junked otherwise, so what is the problem ?
