Glad that by the time I came around my family had moved into town and got their palatable meats chopped up by the butcher. Do understand everyone ate pretty good for a few days when a hog was butchered at home on the farm.
Still liked going to Aunt Lena, and Uncle Ralph Doolitle's farm. They raised and took their eatin animals to the butcher except for the fowl. The thing I liked was Aunt Lena cooked everything in cast iron and used lard they rendered. fThat made the best hot rolls I've ever had, they just melted in your mouth. And any leftovers from a previous meal, breakfast, lunch, or dinner, was put on the table with the fixins for the current meal.
Still don't understand why anyone would want to eat head cheese. Anything that starts with putting the animals head in a tub of water on the back porch for 3 days just doesn't sound good to me.
