That's why I asked for clarification. Some do low and slow BBQ and that is just wrong for steaks.
To me Ruth's Chris aren't any better than the local supper club steaks that to justify their price. The Bread Basket did all theirs over an open charcoal pit and those were great steaks. Better yet is home over very hot charcoal.
Also when you eat out at many places the steaks are not cooked how you asked. Medium rare is usually closer to medium.
