Soup sandwich.

I'd segregate out the channels, and strive for 1 at bottom, one middle, and one top if needed, otherwise keep as far apart as possible, then add clients and hubs as needed.

Wireless, while the ultimate in convenience, sucks after 7-10 clients, but enterprise level stuff (expensive) can help.
