Those straw hud hotels sitting over clear shalow tropical waters

I have seen them in magazines, TV and such over clearest tropical ocean waters. Due to kids, work, lack of funds , you name it, I have not been able to stay in one of those places. My chance maybe here this summer to cross it off my bucket list. Taking 5 weeks off with kids to see some old stuff in Asia, mainly China. Have all that booked this past Saturday leaving us 10 days in Hong Kong and Macau (want to drive or ride in a bus on the world's longest bridge, not so much for the gambling in Macau)on our own. I Got thinking this morning, why not scratch that off my list and stay an other week? I have not talk with my travel agent yet but my plan is to rest up and slow down for a couple days there since most people in Hong Kong speak English, enjoy local foods then off to one of those hut type hotel in the tropical ocean, but where?

Malaysia, Kuala Lumpur, Bali? Coastal, island, I don't care as long as its safe away from political unrest. I'm sure water activities are plenty, but sightseeing or tours are fine with us. I like to get away form the typical American influence but not sure if that's possible. Anyone done it, suggestions? I have 5-6 days left to do just that.
