RE: Dual quads, not sure if you mentioned the engine and I know caddies are famous for mountain motors but that is a LOT of carburetor. I know people who went to dual quads and had to switch back to a single because the car ran $hitty... and as speeder said it will never be a hot rod (not counting the El Dorado funny car that ran locally) but it is your car so do what you like.
