I have a 87 Targa with 15" Fuchs that came with car. There is very little out there for 15" tires that aren't closer to track tires. I ended up with Kuhmo for now just to get something on them and went with 225/50/15 on all four corners. I have been aiming for a beefier look and so put 7mm spacer on rear as well and lowered front end 1". Have not rolled fenders yet but would need to if I do anything bigger. The Pirelli's are nice, but were $250+ more per tire so didn't want to mess with that for now as I have many other items on the car I need to deal with. I too have considered 16" Euromeister or something else just to have on car so I can get more tire choices, and then save the 15" Fuchs, but will say they are fine the way the car is now. The Kuhmo's look good, do make some road noise I think and I live in Texas, so seem fine so far in heat (never gets that cold here but I haven't owned car cold months yet).
