I think the feed lots that supply the high end steak houses are in the Midwest, like Kansas and so on. They have the highest concentration of high grade beef. If you can read the codes on the package, you can work out where the beef came from. Sometimes, you can find a cut that came from a Kansas feed lot cow that is USDA Prime.
The reason that Costco has prime beef is that it's a statistical eventuality. They just sell a metric ****ton of beef.
