Red Beans and Rice is a Monday dish. In New Orleans woman would cook RB&R on Monday because it was wash day. So the Beans cooked all day while doing the clothes.
At our house RB&R is an event. We make a chicken stock. start off with the Trinity and use andouille sausage. Lots of fresh herbs and spices. Good RB&R are creamy and to get them creamy requires long and slow cooking.
And always do your trinity in bacon grease.
