The business where I was employed for many years was owned by a couple from New Orleans. She still spoke Cajun French.
About once per year she would bring in a big pot of Read Beans and Rice. Lots of Andouille sausage and Cajun spices, oooooweeee is was good. It did get a little um, "musical" around there in the afternoon with a bunch of guys stuffed with beans.
