Good point...it's been years since I've made a long drive of 500 miles or more in a single day. However, I still like to have that option. My Mustang has a smallish 16 gallon tank, so it's range not much more than his bolt. To be sure I'd win our fictional bet, I'd also insist the run be made on a winter night here. Winter temps in the teens and lower are common in Central and Eastern Oregon, so his lights and heat would eat more juice.
Matt is a "lock artist" when it comes to playing pool for money...only gambles when he knows he's going to win. So, I'm sure this "race" will never happen.
Like I said, I was favorably impressed with his bolt as far as street driving is concerned. You made a good choice for your area of the country, where charging stations are probably more plentiful than here.
