Parsing your post:

1) 15" Fuchs are fine for this application, but precious few non-track-centric tires available-If you're not planning on driving too many miles, only drive in warm weather and avoid rain, these tires (and the torque bump caused by their smaller diameter) will give you a fun-grippy experience

2) I'm currently running 911-spec 16x7(f) and 16x8(r) Fuchs with 205/55-16 (f) and 225/50-16 ® tires. This is a good/safe combo, as it allows for a WIDE variety of tire choices. I've chosen to run Michelin A/S3+ tires, which provide year-round drivability (they do quite well in the cold) and good ride/performance.

3) 930 brakes fit fine under both the 911-spec 16" Fuchs and (don't hold me to it) even 15" Fuchs -- certain Brembo combinations do, however, require the 944-spec Fuchs to work -- That said, unless you're tracking your Carrera (and have experienced fade with your stock brakes), you're not likely to realize any performance advantage from a 930 brake upgrade. My Carrera's stock brakes lock up the wheels (and modulate) just fine and I have yet to experience any brake fade

4) 16x9" fuchs -- while these are a better choice than the 16x8 for running 245/45-16 tires, their availability is quite limited and primarily comprised of the streetable-race-ready tire types -- Further, 16x9 Fuchs are too wide to run 225/50-16 tires, making 16x8 a bit more versatile (as you can run either 225/50-16 or 245/45-16 tires on the 16x8s).
