Interesting build JB, is it going to be NA or turboed? It would be interesting to know what the hp difference is between the 74mm and the std throttle bodies
Instead of a M84, why don't you just run a M130 that has integrated DBW capability, plus a bit more like wall wetting modelling? (but no cruise control option!)
As for the accelerator pedal, there are good suggestions here to keep the existing pedal but to install a position sensor:
