We've always called them Hoagies. I'm assuming my dad brought that name from the Cincinnati area from when he was a kid since I've never lived anyplace where they were called hoagies.
Around here, you'll find poboys, but they are usually fried seafood, shrimp, fish, oysters.
I guess the usual of things like cold cuts or meatballs are called subs.
This guy makes/made the best meatball sub I've ever had.
He had a location in downtown Houston, but it's closed (which really sucks). I know he has or had another location, but I've never been to that one and don't know if it's still around.
