Just looking at the pictures and knowing how I'm going to do my roof skin I would surmise that they are taking the front off at the spot welds that lay just below the window seal.
The new skin will spot weld onto the front and then weld along the cut line along the sides of the car. The front lower lip is still there, but the old sunroof skin still needs to be drilled out and fully removed from the front lip spot welds. Just an hypothesis, as the picture isn't all that clear.
