Pirelli Diablo Rosso IIIs. I've used that line for years for all sorts of riding including track days (not on the R bikes though). They are sticky and predictable. Despite the R11s heft, and mine, they still last a while.
I don't recommend Pirelli Angel GTs. Both tires have an odd wear pattern and as they wear, the front end feels wonky, long before it's time to change them. I only ran those on the R11S before I switched to the Diablo Rosso IIIs like I run on the HP2, the Daytona 675, and the old Ducati.
