I'm sure that you are aware that universal joints don't turn at a constant velocity so you need the two to be aligned with each other so that they cancel out the speed difference.

I know what you are seeing, and indeed I think you are correct, but it's actually not possible to align the u-joints perfectly due to the varying angles of the shafts - the angle of the steering shaft (and the steering wheel) is actually closer to horizontal than the pinion shaft on the steering rack. This difference shows up in the connecting shaft as misalignment between the two u-joint ends, even when the other ends of the joints are in perfect alignment with the pins pointing straight up.

I had to stare at the piture for a while before I figured that out lol!!
