I use Griot's Garage products.
I find they do what they are intended for, without damage to the car.

For the entire vinyl portions of the interior I wore nitrile gloves, and using my hands, rubbed Leather Rejuvenator into the surfaces.

It restores some moisture to the old vinyl/leather (steering wheel), eventually soaks in and leaves a light sheen- while protecting the vinyl from deterioration/shrinking & cracking.

I don't leave the 911 sitting outside, so UV rays don't damage anything.
