Ugh. To me, wrong on both counts. If I eat fries, I eat them right out of the oil as soon as I can with a little salt added just before serving. Nothing else needed if the fries are fresh cut and properly done.
There should be no oil in the fries. The purpose of the oil is to turn the moisture in the potato to steam and as soon as the steaming is done, so are the fries. Steam drives the oil out.
Same with catfish. You gotta watch the bubbles. They change when it's time. It's a very subtle thing.
