The real difference is what type of conversation is it?
With most of my buddies, like most men, we get to the point, and skip all pleasantries of how are you and the family and the other stuff that is just fluff. A text is perfect for that, ask question, get answer.
Back in the olden days when I dated, and I called a new chick we might talk on the phone for a few hours of pure random stuff on zero importance just to get to know one another. I am not going to have a conversation via text. Talking is faster.
