My guess is that it's the spices that are a little different every time. You know, Spice #1 was a little different tasting this year than last due to more/less rain/sun/whatever, Spice #2 came from a farm down the road that uses slightly different seed, etc...
My last batch of chili tasted completely different from most of them, and didn't get as red. I'm thinking the batch of chili powder was different from most. The place that I get our spices has excellent spices, usually far, far superior to what you get at any grocery store, but every once in a while, a batch is VERY different from most of them.
