Raw bacon to start. An hour smoking and 30 minutes @ 350 on the smoker.
Make the peppers into little "boats" by slicing just one side (the side that wants to stay "up" and scooping the insides out with a small spoon. Wrap the bacon all the way around and pin it with the toothpicks. The cut side stays up in cooking.
And of COURSE any Pelicans are invited to our house!
