Cool sputterin and poppin

i recently had a complete engine rebuild on my 69 912. sent all parts to a machine shop and replaced anything that needed replacing. i added bursch exhaust as well. my carburater's are dual dellorto's. my car has recently been sputtering and popping all over the rpm range. mainly when building up compression coming down a hill but often just idling. my best guess is that it is due to carburation problems. my mechanic and i both weren't familiar with these carbs but wanted to give them another chance with the rebuilt engine. these carbs came with the car when i bought it 3 years ago. does anyone out there have advice or a diagnosis. my mechanic claims its just dirt getting caught in the carbs but im not sure if he really knows what it could be with these carbs.
