We make about 15 pounds of brats every fall using 3 or 4 recipes, with varying spices. If you want a beer flavor to your brats you can't go wrong with MRM's suggestions, but frankly, if you find a spice combo that you like, the beer cooking is secondary. You DO need to boil them in something however, so why not a hoppy beer?
