5 pastas 5 ways. Made some pesto the other day, my basil plant was getting a little unruly, and then things got completely out of control after going to my favorite vegetable market and cheese shop. If I do this again, I'll make a warming bath table for each of the fresh pastas after they've been cooked.
Each was good but the squid ink fettuccine and angel hair were by far the best.
Pappardelle with fresh compari and Italian cherry tomato sauce
Toasted crispy gnocchi with pesto
Linguini with EVOO, garlic and Italian parsley
Squid ink fettuccine with Gorgonzola dolce (young gorgonzola), fig preserves, speck and peppadew peppers. Unbelievably good. Sweet + creamy + briney + floral
Angel hair with lemon artichoke sauce with Italian parmigiano reggiano dusted with toasted cashew. Again, phenomenal. Steaming an artichoke and scraping the leaves really paid off.
A nice Barolo paired beautifully.
