I love these threads but I think you need to get a little more focused in your criteria. Right now it could include about 50% of the cars for sale on Autotrader.  I always have suggestions but right now I’m not sure if it’s a Wrangler Rubicon or a CL65 AMG.
But I will add one thing. You’ll be about double your budget to make a ‘60s Mustang drive like a mediocre modern sports car.
