From an overall performance perspective, the newer car is the better one. But you are chasing a "feel" and that can only be done with a test drive. My dad's Cayman S is a hoot to me. PDK, 300+hp. But its not as engaging to me to drive as an older car (914/aircooled 911 or even a 944 series car).
My guess is once the rush of the "new" car fades, like your Cayman, neither the 997 or 991 will be around long.
