We do the plain aluminum Vollrath brand sheet pans from Webstaurant and use silpats or parchment paper. Cheap enough to buy in bulk - they're super handy in the workshop or for kid art projects and without a coating you can put them on the grill or in the broiler and hack at them with metal utensils with no fear. Stick with one brand though - the sizes are almost uniform but I have some off brand 1/4s that won't nest with the Vollrath ones.

Same place is a great spot for "restaurant-style" nonstick pans. Abuse them and replace them every 2-3 years.
