I wouldn't skip the 2nd dose - here's why:

I’m expecting that at some point, before we declare “heard immunity”, there will be restrictions for those of us without the vaccine - dinning, bars, theaters, travel, etc…..

Once we hit “heard immunity” levels, we will ditch the masks and social distancing. Then, either very few will have Covid, as it was mostly eradicated by the vaccine, or lots of people will have Covid, but nobody cares, as they have the vaccine that gets rid of the symptoms. If it’s the later, the exposure to Covid will go way up - just because you have dodged Covid this far, doesn’t mean you will be able to in a future where lots of people are carrying it and there are no masks or social distancing.

I remember in 5th grade when we talked about the European explorers that first came to America. They carried a lot of diseases that they didn’t know they had - as they had no symptoms - they were just carriers, but had natural immunity from centuries of exposure. The natives they visited in America had no immunity, and many got sick and died - even entire civilizations were wiped out. This is how I see our future. Many people will be carrying the virus but not know it, as they have no symptoms. The vaccine gets rid of the symptoms, not the virus. Those without either natural immunity or the vaccine may continue to get sick and die.
