If you're taking Hwy 1, be sure to stop at McWay falls in Julia Pfeiffer Burns State Park and Purple Sand Beach at Mile Marker Mon 45.64. Purple Sand Beach is also famous for its "Keyhole Arch Rock." Lunch at Napenthe's is worth it for the view. Bixby Bridge is a famous bridge that you'll drive across along the way. Stop and take pics if you wish.
