The Rocky Mountaineer is now running more modern equipment in Colorado and Utah but you spend nights in hotels along the way. Operations like Pullman Rail Journeys was in business for a while but then not. It may have started up again. There are a number of private cars for charter but they are usually quite costly. If you have a group of like minded friends to split the cost with it is still pricey. There is an organization of private car owners, some of which will charter cars that you can hang on the back end of AMTRAK trains.

Thanks. My wife loves period TV, and watches a bunch of British mysteries. She'd love to go on a train ride (think "orient express") with the cool old cars, dining cars, etc.... I've been assuming that sort of thing is pretty rare.
